Stage 1 · Chosen
By producer, not by margin.
Four things: the pantry, the counter, prepared food and catering trays.
We carry fewer lines than a supermarket and know where each one comes from. Olive oil is dated, because oil two years old is not the same product however good the label looks — and we will tell you which bottle is this season rather than letting you guess.
By producer, not by margin.
So you know how old the oil is.
What it is actually for.
Lines dropped if they do not move.
Two or three, free, no pressure.
To the amount you actually want.
Including unpasteurised where relevant.
How to keep it and how long.
Ask to taste anything before you buy it. Feta varies enormously between producers — sharper, milkier, firmer — and the only way to find the one you want is to try two. Cheeses made from unpasteurised milk are labelled as such, which matters if you are pregnant.
Cooked here daily and sold by weight or by the tray. Ingredients and allergens are available for everything — dishes commonly contain milk, eggs, wheat, nuts and sesame, and the kitchen is not allergen-free, so please speak to us rather than relying on a label if an allergy is serious.
Daily, in small batches.
Available for everything, on request.
Sold with a use-by date.
Refrigerate as soon as you get home.
An honest count of what feeds how many.
Placed at least a day ahead.
Confirmed for the whole order.
Timed, with keeping instructions.
Trays need at least a day, more at Easter and Christmas when the kitchen is fully booked weeks out. We will tell you honestly how many a tray actually feeds rather than the optimistic number, because running short is the thing people remember.
Ask us — if we do not carry it, we will tell you who does.
